We have an excellent fish market in town, Empire Fish.  I don’t get there as often as I like but we want to go weekly.  They have a great selection and the fish is fresh.  They are one of the main suppliers to restaurants in the area.

I was there last week.  When I go I usually just check out what looks good and what’s on sale.  I picked up a walleye fillet and a couple of soft-shell crabs for our supper.

The previous week they had monk fish on sale.  We love monk fish.  But this week, they had monk fish livers!  I had never heard of them before, let alone seen them.  They look pretty much like what you’d imagine (and that’s sort of disgusting.)

I asked the monger what you do with monk fish livers.  He said he had no idea.  Someone had ordered a couple of pounds of them and they just put the rest of what they received on sale.
